A Tailored HVAC Installation in an Exceptional Fine Dining Establishment
In the demanding world of fine dining, every detail matters: the freshness of the ingredients, the precision of service, the acoustics… and the quality of indoor air. With this in mind, a prestigious Michelin-starred restaurant located on the North Shore of Montréal recently entrusted AirGreen with the mission of completely redesigning its commercial ventilation system. The goal? To offer guests the most refined multisensory experience possible, while ensuring a healthy, controlled environment for the staff. The result exceeded all expectations.
The Challenge: Quiet, Efficient, and Invisible Ventilation
When this restaurant contacted us, their needs were both simple and highly technical:
-
Constant and discreet air renewal throughout all zones, including the main dining room, the open kitchen, and the wine cellar.
-
Absolute absence of any noticeable noise so as not to disturb the venue’s intimate atmosphere.
-
A flexible system, able to adapt to significant changes in occupancy and heat during service hours.
-
Strict compliance with public health and food safety standards.
To meet these needs, our team delivered a custom solution by integrating a high-performance centralized ventilation system, based on a next-generation heat recovery ventilator (HRV), combined with intelligent zone control management.
The Technical Solution Selected by AirGreen
After a detailed analysis of the plans and a full on-site inspection, we selected the following equipment:
-
A VENMAR EVO5 700 CFM HRV unit, known for its performance in high-occupancy commercial spaces.
-
Acoustically insulated rectangular ductwork, specifically designed to reduce noise disturbance in the restaurant’s sensitive areas.
-
An AirZone zoned control panel, allowing for fine-tuned airflow adjustments in real time based on occupancy.
-
Diffusers seamlessly integrated into the architecture, preserving the venue’s refined and understated design.
Each component was selected not only for its reliability, but also for its energy efficiency, making the installation eligible for LogisVert subsidies offered to commercial buildings undergoing energy-efficient upgrades.
Installation Steps: Discreet and Efficient Execution
The project was completed outside operating hours, from midnight to 9 a.m., respecting the restaurant’s working schedule and ensuring no service interruption whatsoever.
-
Days 1-2: Removal of the old system and mapping of existing ductwork.
-
Days 3-5: Installation of the new acoustic ductwork and HRV unit.
-
Days 6-7: Integration of the zoned control system and pressure testing.
-
Day 8: Calibration, acoustic testing, and final validation in the presence of the head chef and dining room director.
Our technicians worked with surgical precision, considering every constraint: limited ceiling space, fragile surfaces, noble materials (wood, marble, copper), and the absolute requirement to leave no visible trace.
Measured Results and Client Testimonial
After 30 days of use, the results speak for themselves:
-
43% reduction in lingering odors in the dining room.
-
35% decrease in CO₂ levels during peak hours.
-
Improved staff satisfaction in the kitchen thanks to continuous ventilation without direct drafts.
-
Outstanding client feedback regarding the cleaner, lighter ambiance of the space.
The owner shared with us:
“We never imagined a ventilation system could transform the customer experience so dramatically. Even our sommelier noticed certain wines opened better thanks to the stable temperature and ambient humidity.”
AirGreen’s Expertise at the Heart of HVAC Excellence
This project perfectly illustrates our approach: understand the client’s real needs, and meet them with precise, durable, and invisible technical solutions. Why Ventilation Is a Strategic Asset for Restaurants

The benefits are numerous:
-
Improved indoor air quality (IAQ).
-
Reduced risk of cross-contamination in the kitchen.
-
Maintained ideal temperature and humidity levels for wine, food, and guest comfort.
-
Greater energy efficiency thanks to high-performance heat recovery units.
